🍯 What is Medovik?

Medovik is a traditional Russian cake passed down through generations. Its name derives from the Russian word for honey – "myod" ( myod ). It consists of several thin layers of honey cake, alternating with a creamy filling made with sour cream or condensed milk. Each bite is a harmonious blend of caramelly, tender cake and fresh, creamy filling – a perfect balance of sweetness and freshness.

In Medovik, honey plays more than just a role—it's the star of the entire dessert. Heating honey with sugar and butter creates a deep, almost caramel-like flavor that you can't achieve with regular sugar. That's why it's important to use high-quality honey —preferably straight from the beekeeper.

👨🍳 Recipe: Medovik – Russian Honey Cake

Ingredients for 6–8 layers:

For the cake:

  • 100 g honey

  • 150 g granulated sugar

  • 100 g butter

  • 2 eggs

  • 1 tsp baking soda

  • 350 g flour

For the filling:

  • 400 ml sour cream (min. 20% fat)

  • 200 ml whipped cream

  • 100 g icing sugar

  • 1 tsp vanilla (optional)

Preparation method:

  1. Heat honey, sugar and butter in a bain-marie until melted.

  2. Add baking soda – the mixture will foam and turn light brown.

  3. Stir in the eggs, then the flour to form a soft dough.

  4. Divide into 6–8 pieces, roll out thinly and bake for 4–6 min per piece at 180°C.

  5. Beat the cream, sour cream, and sugar until smooth. Fill and stack in layers.

  6. Let the cake rest in the refrigerator overnight.

Tip: Use one of the baked layers as a crumb topping on top – for a rustic, artisanal finish.
