Forest honey is a variety of honey that originates not from flower nectar, but from a sweet substance called honeydew. This honeydew is collected by bees that fly from tree to tree, primarily on species such as oak, beech, and lime.

Taste

Forest honey offers a distinctive, rich, and intense flavor that sets it apart from other honeys. It has a complex flavor profile with an earthy, woody sweetness, sometimes complemented by a hint of bitterness. The flavor can vary depending on the species of trees from which the honeydew is collected. Generally, the flavor of forest honey is often described as more robust and less sweet than that of flower honey.

Texture

Forest honey has a deliciously creamy texture. It's also darker than most honeys, ranging from deep amber to almost black, and has a thick, syrupy consistency.

How to eat/use the honey ?

The forest honey from Italy can be used in different ways:

  1. Raw:  Try the forest honey straight from the jar to experience the full, rich flavor and texture of the honey.
  2. As a sandwich spread:  Spread the forest honey on toast, pancakes, waffles, or crackers. Try it with fresh fruit for a delicious treat.
  3. In sauces and dressings: Add forest honey to salad dressings, marinades, and sauces for a sweet touch. Be aware that excessively high temperatures can break down the natural enzymes in the honey. Therefore, it's best to add the forest honey only after the sauce or dressing has cooled.

Shelf life

Honey is a food product prized for its long shelf life. Although it doesn't have a set expiration date, its flavor can change slightly over time. Therefore, we recommend consuming honey within two years of purchase to fully enjoy its flavor.
