What is Acacia Honey?

Acacia honey is made by bees that collect nectar from the white blossoms of the acacia tree. These trees grow mainly in Eastern Europe, including Romania and Hungary, where they bloom profusely in spring. Acacia honey belongs to the mono-floral honeys: honey that predominantly comes from one specific plant, unlike, for example, flower honey, which originates from a mix of flowers.

Acacia honey has a light, almost transparent color and a soft, subtly floral taste that is not overpowering. This mild taste makes acacia honey broadly applicable: it combines well with various dishes and drinks without overpowering other flavors. Why Does Acacia Honey Stay Liquid for a Long Time?

The most striking feature of acacia honey is that, unlike most other types of honey, it hardly crystallizes. This is due to the relatively high ratio of fructose to glucose in the nectar of the acacia blossom. Crystallization occurs when glucose molecules adopt a solid structure; because acacia honey contains little glucose, the honey remains liquid and clear for months to even years. Use of Acacia Honey

Thanks to its mild taste and liquid texture, acacia honey is versatile in use: pure from the spoon, in yogurt or cereals, on bread, or in dressings and marinades. Acacia honey also dissolves easily in hot tea — preferably keep the temperature below 40°C to preserve its natural structure. The soft, unobtrusive taste also makes acacia honey a popular choice in families with children from 1 year old, because the taste is less likely to be rejected than a stronger type of honey such as thyme honey.
