When the sun is shining and you're craving something light yet flavorful, this nectarine-honey salad is exactly what you need. Sweet, juicy, fresh – and on the table in 10 minutes.

Why nectarine and honey?

Nectarines have that irresistible balance of freshness and sweetness, with a soft bite that pairs wonderfully with the warm, velvety taste of honey. This combination immediately elevates a simple salad. Add some creamy, salty, or crunchy elements, and you have a dish that is both nutritious and elegant.

Recipe: Nectarine-Honey Salad

Ingredients (for 2 people):

  • 2 ripe nectarines, thinly sliced

  • 2 handfuls of arugula or lamb's lettuce

  • 50g soft goat cheese (or feta)

  • 1 handful of toasted walnuts or pecans

  • 1 tsp fresh thyme leaves (optional)

  • 1–2 tbsp liquid honey

  • 1 tbsp extra virgin olive oil

  • 1 tsp white balsamic vinegar or lemon juice

  • Salt and freshly ground black pepper to taste

Preparation:

  1. Slice the nectarines into wedges.

  2. In a large bowl, mix the lettuce with olive oil, balsamic vinegar (or lemon juice), salt, and pepper.

  3. Add the nectarines and crumble the goat cheese over them.

  4. Sprinkle the nuts and thyme over the top.

  5. Drizzle generously with honey just before serving.

Serving tip:

Delicious with a piece of rustic bread or as a side dish with grilled chicken or salmon.


Variations

– Replace nectarines with peaches, figs, or pears.
– Not a fan of goat cheese? Use mozzarella or burrata.
– Prefer vegan? Omit the cheese and add avocado for creaminess.
