Summer Delights: Nectarine-Honey Salad with a Twist

Recipe: Nectarine-Honey Salad
Ingredients (for 2 people):

2 ripe nectarines, thinly sliced

2 handfuls of arugula or lamb's lettuce

50g soft goat cheese (or feta)

1 handful of toasted walnuts or pecans

1 tsp fresh thyme leaves (optional)

1–2 tbsp liquid honey

1 tbsp extra virgin olive oil

1 tsp white balsamic vinegar or lemon juice

Salt and freshly ground black pepper to taste
Preparation:

Slice the nectarines into wedges.

In a large bowl, mix the lettuce with olive oil, balsamic vinegar (or lemon juice), salt, and pepper.

Add the nectarines and crumble the goat cheese over them.

Sprinkle the nuts and thyme over the top.

Drizzle generously with honey just before serving.
