Ivy honey is harvested by bees that collect nectar from the flowers of the ivy plant (Hedera helix), which blooms in autumn. This honey is rarer than many other varieties, as ivy bloom occurs late in the season and harvesting conditions are often challenging. Italian ivy honey comes from green and forested regions where ivy grows abundantly and is known for its distinct flavor and unique texture.

Taste

Ivy honey has a robust, spicy flavor with earthy notes and a slightly bitter undertone. The taste is intense and less sweet than many other honey varieties, making it an interesting choice for those looking for a powerful and distinctive honey.

Texture

This honey crystallizes very quickly after harvest and therefore often has a firm, almost buttery texture. The color varies from light yellow to beige, depending on the degree of crystallization. Thanks to its firm texture, ivy honey is easy to spread and ideal as a topping for bread.

How to eat/use the honey?

Ivy honey is excellent on a slice of fresh bread or toasted toast, where its creamy texture and intense flavor truly come into their own. It is also suitable for adding to warm milk or herbal tea, especially in the autumn and winter months, due to its warming and soothing properties.

Due to its distinct flavor, ivy honey also pairs excellently with savory dishes, such as a cheese board with pungent or blue cheeses. Additionally, it can be used in marinades or dressings for a spicy, slightly bitter touch.
