Healthy Homemade Magnums
The sun is shining, and that means: ice cream time! This recipe for healthy, homemade 'Magnums' is an absolute favorite for summer days. They are creamy, fruity, and covered with a delicious layer of chocolate – but without unnecessary sugars or artificial additives.
Ingredients (for 4 ice creams)
For the ice cream:
- 150 grams (1 cup) fresh or frozen strawberries
- ½ cooked beetroot (optional, for extra color and nutrients)
- 1 small banana
- 200 grams Greek or plain yogurt
- A drizzle of honey or maple syrup (to taste)
- 1 teaspoon vanilla extract
For the chocolate coating:
- 400 grams milk chocolate
- 2 tablespoons coconut oil
Tip: you need a relatively large amount of chocolate to properly dip the ice creams. You can use any leftover chocolate to make rice crispy treats or cookies, for example.
Equipment
- Blender (e.g., a Ninja Nutri Blender)
- Popsicle molds (preferably in a holder or on a tray)
- Baking sheet or tray for the freezer
Preparation
Step 1: Prepare
Place the popsicle molds on a tray or baking sheet so you can easily move them in and out of the freezer later.
Step 2: Make the ice cream
Blend all ingredients for the ice cream until smooth. Taste and add extra honey or syrup if desired. Divide the mixture among the popsicle molds and freeze for at least 4 hours, until completely frozen.
Step 3: Chocolate coating
Melt the chocolate together with the coconut oil. This can be done in a double boiler or in the microwave (checking every 30 seconds). Pour the melted chocolate into a tall glass.
Remove the ice creams from their molds one by one and quickly dip them in the chocolate. Then place them flat on a baking sheet lined with parchment paper.
Important:
Work quickly – as soon as the chocolate cools, it becomes more difficult to coat the ice creams nicely.
Storage
Not eating them right away? Wrap the ice creams in a freezer bag or store them airtight in a container. They will keep in the freezer for up to 3 months.
